During this step, any compacting (tamping) of the coffee grounds should be avoided as far as possible. In order to achieve uniform puck density and evenness, an interplay of vertical movement (tamping/compression) and horizontal movement (distribution/leveling) is necessary.
The Pro-Leveler from Geisinger should therefore be set so low that the coffee grounds are evenly distributed but not compressed.
